Most Italian menus in Sydney come from everywhere at once. For one night, ours comes from one place.
Abruzzo sits between the Adriatic and the highest peaks of the Apennines — shepherds' country, where cheese, eggs and slow-roasted pork went further than anything expensive, and where the food still tastes of that. It is the region that gave Italy pasta alla chitarra, cut on a wooden frame strung like a guitar.
On Thursday 24 September the kitchen cooks it properly: a board of pecorino and salumi for the table, then four courses that each come from somewhere you can point to on a map — Teramo, Guardiagrele, the hills behind the coast.
The menu was put together with Vincenzo of Vincenzo's Plate, who cooks Abruzzese food the way it is cooked at home.
