The Night
Umbria is the one region of Italy with no coastline. Everything it eats comes off the hill it is standing on.
Umbria sits in the middle of the country, landlocked, green and slow — oak woods, olive terraces and hill towns. Its food is pork, lentils, truffle, oil and bread, and it is unusually easy to say exactly where each thing comes from. Norcia has been the country's pork town for so long that the Italian word for a pork butcher, norcino, is simply the name of the town.
On Wednesday 14 October the kitchen cooks four courses that each carry an address: Norcia, Spoleto, Montefalco, Assisi.
The wine comes from Tappo & Co on Ramsay Street in Haberfield. Stefano, who grew up in Terni, chose a glass for every course and is here on the night to pour them — and the bottles can be ordered to take home.
There is live entertainment through the evening, the way a regional table is supposed to sound.
$99 per person for the four courses, $20 more for the pairing. One sitting, one night, and the room is not a big one — book early.

Bruschetta with Umbrian olive oil and fresh tomato with a Norcia salumi board of prosciutto, capocollo and salame; strangozzi alla norcina with Norcia sausage, cream, nutmeg and truffle; cinghiale in umido, wild boar braised in Sagrantino with juniper; and rocciata di Assisi, a rolled pastry of apples, walnuts, raisins, figs and pine nuts spiced with cinnamon. The optional pairing is Bigi Orvieto Classico, Perticaia Trebbiano Spoletino, Colsanto Sagrantino di Montefalco and, with the dessert, Colazingari Ratafia Ciociara.
Tappo & Co are an Italian wine merchant on Ramsay Street in Haberfield. Stefano, who is from Terni in Umbria, chose the wines for the night and is in the room pouring them, and the bottles can be ordered to take home on the night.
